Banana Chocolate Chip Whole Wheat Muffins

Makes 12-18 muffins
2 cups all purpose flour
1 cup whole wheat flour
1 tbsp. baking powder
1/2 baking soda
1/4 tsp. salt
1 1/2 cups milk
3 eggs
1/4 cup melted butter
1/4 cup melted coconut oil
1 tsp. vanilla
3/4 cup granulated sugar
grated fresh rind of one orange
3 large ripe bananas mashed
1 cup chocolate chips
1/4 cup hemp hearts
Orange Glaze
3 tbsp. orange juice
1/4 cup icing sugar
Preheat oven to 375°. Spray or line muffin tins with paper liners. In a large bowl, whisk together the first 5 dry ingredients making sure your baking soda and powder are well combined with the flours. In a medium bowl, mash bananas, beat in eggs, melted butter and coconut oil, vanilla, sugar and grated orange rind. Whisk wet ingredients well to combine. Pour wet over dry ingredients and stir just until combined. Fold in chocolate chips and hemp hearts. Fill prepared muffin cups right to the top, molding up slightly. Bake 15-20 minutes or until pick inserted comes out clean (besides the chocolate). To make orange glaze, combine glaze ingredients in a custard cup or ramekin, microwave for one minute, remove and stir with a little whisk, return to microwave for approximately one more minute until thickened and glaze like consistency. When muffins have cooled brush with glaze. Serve warm with butter. This recipe is a much healthier version of the typical banana chocolate chip muffins. The whole wheat flour and the hemp hearts add fiber, protein and vitamins. Enjoy ! NOTE: for dairy free use margarine instead of butter and almond milk instead of milk.
