Apple Dumplings

Spiced apples tucked inside crisp puff pastry makes these a great individual B&B dessert. These can be made ahead of time and reheated in a 350°F oven for 10 minutes. You can totally take it up a notch by serving with a dollop of whipped cream or ice cream.

1/3 cup butter

2/3 cup of dark brown sugar

4 baking apples such as Granny Smith, Ida Red or Spy. Peeled and cut into thick slices

1/2 tsp. cinnamon

1 tsp. fresh lemon zest

1 tsp. powdered ginger

1/2 pkg puff pastry

1 egg beaten with a pinch of salt

Raw coarse sugar

Icing Sugar for dusting and presentation (optional)

Preheat oven to 400°F. Combine butter and brown sugar in a medium skillet over medium heat, add apple slices and cook until sauce is caramelized and apples are cooked 5-10 miinutes depending on your apple. Add lemon zest and spices and stir to combine. Remove from heat.

Cut a sheet of puff pastry into 4 equal 5 inch squares. Place on a parchment lined baking sheet. Divide cooked apple slices evenly among the 4 pastry squares. Don’t add very much cooking liquid with the apples.Bring up the 4 corners and seal the seams with egg wash and pinching the seams. Then brush the entire dumpling with the egg wash and sprinkle with raw sugar.

Bake for 20 minutes or until the pastry is golden brown. Cool 10 minutes then plate with some warm apple cooking liquid puddled on the plate. Dust with icing sugar if desired and serve the remaining sauce in a little pitcher to pour over the dumpling if desired.
