Bran Muffins you can personalize to fit your mood or what you have in your pantry.

We are all concerned about getting enough fibre and essential nutrients in our diets. These muffins a full of fibre, calcium and depending on your additions…iron and vitamin C as well.
This recipe lets you stir up a different batch of muffins every time by what you add to the master mix. Store the mix in an airtight container in the refrigerator for up to 4 weeks. So making fresh muffins for the morning has never been so easy !
Fibre Full Master Mix:
6 cups all purpose flour
2 cups granulated sugar
2 cups natural bran
1 ¾ cups skim milk powder
1 ¼ cups All Bran Cereal
1 cup chopped almonds or walnuts
¼ cup baking powder
1 tbsp. salt
2 tsp. nutmeg
1 tsp. baking soda
In a large bowl combine all the ingredients very well with a whisk and store in an airtight container in your refrigerator. Keeps for 4 weeks.
Here is where you can add your own additions to make these muffins your own, to make the muffins:
Banana Blueberry Bran Muffins
3 cups Fibre Full Master Mix
1 egg
¾ cup mashed very ripe bananas or applesauce or plain or vanilla yogurt or try pumpkin puree
¼ buttermilk or water
2 tbsp. vegetable oil
Additions: ¾ cup of fresh blueberries, raspberries chopped apple, ½ cup plump raisins or craisins, ½ cup chopped dried apricots, what ever you want to add for a fruit. In the ones I made for this blog I used fresh blueberries
Place master mix in a large bowl. In another bowl, whisk together the egg, bananas or liquid ingredients and oil. Stir just to moisten..if too dry add a bit more water/milk. Gently fold in your fruit. Spoon into greased or paper lined muffin cups. As a little decoration sprinkle some old fashioned large flake oats on top. Bake 375° for 25-30 minutes or until tops are firm to the touch and toothpick comes out clean. Makes 6 large muffins.
