Cheddar Tea Biscuits

I love a good tea biscuit . I also prefer them savoury to sweet.   These are buttery, soft and full of cheesy goodness.  Call them scones if you prefer and cut them into squares cut on the diagonal.  Perfect with breakfast eggs and bacon or a wonderful accompaniment to a good bowl of homemade soup or chili.   I hope you’ll try these and let me know how they turned out.

2 ¼ cups all-purpose flour

2 ½ tsp. baking powder

½ tsp baking soda

½ tsp salt

1/8 tsp. cayenne pepper

½ cup cold butter

1 cup shredded aged cheddar (use a good quality aged cheddar with lots of flavour)

1 cup butter milk

1 egg lightly beaten in a small bowl

Preheat oven to 425°

In a large bowl combine dry ingredients and whisk to combine.  Using a pastry blender or 2 knives cut in cold butter until mixture resembles coarse crumbs.  Add cheese and stir to combine.

Pour in buttermilk and stir  to form a soft slightly sticky dough – do not handle the dough too much.  Turn out to a floured surface and knead a bit until the dough comes together.  Gently pat out to  a ½ inch thick round.  Using a 2 inch cutter, cut out rounds, or for scone shape, pat dough into a square and cut into squares.  Gather up any scraps and repeat.  Place on ungreased cookie sheet.

Brush each biscuit with egg wash and bake in the center of a 425° oven for 12-15 minutes.  Makes about 1 dozen.
