Classic French Toast with Caramelized Cinnamon Apples

French Toast at Bluebird Meadows Bed and Breakfast ranges from the classic recipe to the more complex, Banana’s Foster overnight down right sinful version. This recipe is the simple classic. For some, nothing else will suffice. This recipe serves 2-4
3 large granny smith, ida red or royal galla apples, peeled, cored and sliced into thin slices
1/2 cup butter
1/2 cup packed brown sugar
1 tsp good quality fresh ground cinnamon
1 loaf of the best bakery cinnamon bread you can find, and buy it unsliced. Chop Suey Loaf works well too.
2 large free range eggs well beaten with 1/2 cup of milk
Step One – Apples:
Melt butter and brown sugar together over medium heat in a skillet until sugar is dissolved and bubbling. Add apple slices and cinnamon. Cook stirring gently and occasionally until apples are tender but not cooked to mush. Turn stove to very low to keep warm.
Step Two – the French Toast
Preheat your griddle or skillet to 350 – 375°
Slice 4 slices of the bread 1 inch thick and then cut diagonally into triangles and dip into the egg batter, coating well and evenly. Put all the dipped slices on a plate and continue to dip until all your bread is done. Pour any unused batter over your bread on the plate to soak up all the egg mixture.
Melt a little butter in your hot skillet/griddle. Cook the soaked bread until golden and hot a few minutes on each side.
To serve arrange your French toast triangles on a pretty warmed platter, dust with icing sugar and serve with warm caramelized Cinnamon apples and warm maple syrup on the side.
