Figgy Apple Muffins

I am always looking for new flavour combinations and this is a very good one. Plus the crumbly almond streusel topping takes them over the top.
2 1/3 cups All-purpose flour
11/4 cups packed brown sugar
1 tsp. baking soda
1 /2 tsp. salt
1 large egg
1 cup vanilla yogurt
1/3 cup melted butter
2 cups diced apples (you don’t need to peel them)
1 ¼ cup soft dried figs chopped. If you figs seem tough and dry, soak them in a bowl with some warm water until soft then chop. Kitchen scissors work great for this job.
Ready to go in the oven.
Topping:
¼ cup packed brown sugar
¼ cup chopped or sliced almonds
3 tbsp. old fashion or large flake oats
½ tsp. cinnamon
1 tbsp. butter melted
Combine all toping ingredients in a small bowl and set aside.
Chop fruit and have ready before you make your muffin batter. Preheat oven to 375° Combine dry ingredients in a large mixing bowl. Combine egg, yogurt and melted butter and whisk to combine in a smaller bowl. Add wet to dry ingredients and stir just until combined (batter will be thick). Stir in apples and figs. I use an icecream scoop..Spoon batter into 12 muffin cups (spray muffin tin and edges well with cooking spray). Cups will be very full. Sprinkle topping over muffin batter. Bake at 375° for 25-30 minutes or until pick inserted in one of the middle muffins comes out clean.
