Pumpkin Apple Pancakes

1 cup of all purpose flour

1 1/2 tsp. baking pwd.

1/4 tsp. salt

3/4 tsp. pumpkin pie spice

2 eggs 2 tbsp. brown sugar

1 cup 5% cream

4 tbsp. sunflower oil

1/2 cup canned pumpkin puree

1 small apple peeled, cored and finely diced warmed maple syrup


Directions

In a large bowl combine dry ingredients. In a smaller bowl, combine wet ingredients, mix well. Add wet to dry and mix just until moist, do not over stir. Fold in apples. Ladle onto hot well oiled pancake griddle and cook on side one until starting to dry around the edges and bubbles form in centre. Flip and cook 2 minutes more. Serve with warmed maple syrup.
