Strawberry Banana Oat Muffins with Hemp Hearts

A very moist, healthy muffin. One of my most popular muffin recipes. You can substitute wheat germ for the hemp hearts if you wish.
1 cup all purpose flour or substitute whole wheat flour
1 cup old fashioned oats
½ cup granulated sugar
1 ½ tsp.
baking powder
1 tsp. baking soda
¼ cup hemp hearts
¼ tsp. salt
1 egg
2 cups mashed ripe bananas (5-6)
¼ cup melted becel or soft margarine
1 cup washed, hulled strawberries cut in small pieces
Coarse sugar in the raw for sprinkling on top
Preheat oven to 375° and spay 12 muffin cups with non-stick spray or line with paper liners
Mash bananas and measure 2 cups and set aside.
Wash, hull and slice strawberries to measure 1 cup, set aside.
Combine first 7 ingredients in a large mixing bowl. Mix well with a whisk.
Beat with a whisk, egg and mashed banana together in a smaller bowl, whisk in the margarine.
Add banana mixture to the dry ingredients mix just until moistened with a spatula. Fold in strawberries, reserving 12 pieces for the tops of the muffins. Fill muffin cups full, top with a strawberry slice and a sprinkle of coarse sugar in the raw. Bake for 22-28 minutes or when pick inserted in a middle muffins comes out clean.
