This is simply the best banana bread you will ever make. Low sugar, whole wheat flour, ground flax seed or hemp hearts and dried craisins or any nut or dried fruit of your choice. Healthy, moist, and rises well. What more can you ask for? Why not make some for Mom this Mother’s Day Enjoy!
1/4 cup sliced almonds
2 tsp. Soft butter
2 tbsp. Flour
2 tbsp. granulated sugar
Pinch cinnamon
1 cup all purpose flour
¾ whole wheat flour
3 tbsp. Milled/ground flax seed or hemp hearts
1 tsp. Baking soda
½ tsp. Salt
1 tsp. Cinnamon
¼ tsp nutmeg
¼ cup brown sugar ( I use the dark brown sugar)
3 tbsp. Butter melted
3 tbsp. Plain greek yogurt or sour cream
2 large eggs
2 tsp. Pure vanilla extract
5 medium bananas roughly mashed (about 2 cups mashed bananas) leave some chunky bits
¾ cup dried crans or chopped nuts or any dried chopped fruit , chopped dates are good here too.
Preheat oven 350° Grease a 9×5 loaf pan well. (I use cooking spray then dust bottom with a bit of flour)
In a small bowl combine first five ingredients and set aside for topping
In medium bowl whisk together flours, flax or hemp hearts, baking soda, salt, cinnamon and nutmeg and set aside
In large bowl beat together brown sugar, melted butter, yogurt or sour cream, eggs, vanilla until well combined. Stir in mashed bananas. Gently stir in flour until just combined, a few streaks of flour are fine) fold in craisins or nuts
Pour into prepared pan and bake 50-55 minutes or until pick comes out clean.
Cool 5 minutes and carefully remove and allow bread to cool on wire rack.
Serve warm or at room temp. To store wrap cooled loaf in in wax paper then in foil and store in a airtight container in fridge. Rewarm banana bread before serving.
