Banana Oatmeal Gluten Free Pancakes- Also alternative ingredients for non-gluten free as well.
These pancakes are healthy, moist and delicious. A great way to use up a over ripe banana. This recipe also cuts easily in half for a smaller batch, but why not make the whole recipe, freeze any leftover pancakes, maybe layer them in-between wax paper and then in the morning pull out the toaster and you have a healthy quick breakfast alternative. 1/2 recipe makes 13 pancakes.
Recipe:
2 cups GF pancake mix from Bulk barn or Bob’s packaged GF pancake mix ( non-gluten free, use your favourite ready made pancake mix)
½ cup quick oatmeal (for Gluten Free, remember to purchase special Wheat Free oats. Most oats are processed in facilities that process wheat flour…so for Gluten sensitive people these oats will cause stomach issues)
1 tsp. baking powder
½ tsp salt
2 tbsp brown sugar
*Combine all dry ingredients in large bowl
2 eggs
1 ripe banana mashed
2 or more cups of buttermilk….you might need more, can add regular milk here too
1 tsp. good vanilla
6 tbsp sunflower oil or canola (I prefer sunflower or other odorless oil here..canola can have a fishy smell/taste)
*combine wet ingredients in small bowl and whisk well to combine
Add wet to dry combining well, you might have to add more milk. Batter will be thick. Drop by very large heaping tablespoons onto well greased, preheated griddle, spread the batter a bit with the spoon to flatten and spread out. This is the time to add berries, choc. chips or thin slices or chunks of banana, push down into each pancake. Cook on one side 2- 3 minutes or until edges start to dry and bubbles start to form in the pancakes. Flip and cook on other side 3 minutes, flip and then one final minute or until done….test with a sharp knife in the middle of the largest one for doneness. These are a dense healthy pancake and cooking times will vary with the temperature of your griddle.. .griddle should be 350-375° F.
Serve with warm maple syrup and sliced bananas
Variations: Add a few berries to the pancakes just after you have ladled them onto the griddle, or chunks of sliced banana, or even chocolate chips…chocolate and bananas are made for each other! ENJOY !
