Gluten Free Corn Pancakes with Black Cherry Sauce

Looking for a deliciously different pancake recipe? This one definitely fits the bill and it’s Gluten Free! You could definitely change out the cherries for Blueberries or peaches depending on what is in season, but there is something special about someone taking the time to pit and create a black cherry sauce from fresh cherries. Gluten Free Corn Pancakes with Black Cherry Sauce
1 cup yellow cornmeal
½ cup gluten free flour
½ tsp. xanthan gum pwd.
2 tsp. baking powder
¼ tsp salt
2 tbsp. melted butter
1 cup buttermilk
2 large eggs
1/2 cup chopped pitted black cherries
Black Cherry Sauce
3 cups pitted fresh black cherries
Juice of ½ a fresh lime, or if it’s a dry lime, the whole lime
2/3 cup sugar
½ tsp. almond extract
1 tsp. cornstarch
½ tsp vanilla
1 tbsp. water
To make the Black Cherry Sauce, pit cherries and combine in a small saucepan with lime juice and sugar, mash a bit with a potato masher to release some of the cherry juice. Bring to a boil over medium low heat, reduce and cook on low for about 10 minutes or until cherries render their juices. Combine cornstarch vanilla and water and add to bubbling cherries on the stove, stir until thickened and bubbly..about 2 minutes. Add almond extract and remove from heat. If you have frothy bubbles add 1 tbsp butter at the end and stir to combine. The bubbles should reduce to nil.
Pancakes:
Preheat griddle on 350°. Combine dry ingredients in a large bowl. In another bowl beat eggs and add buttermilk and melted butter. Add liquid ingredients all at once to dry and stir just to combine, do not overmix. Drop approx. 1 heaping tbsp. of batter on an oiled griddle, add a tsp or so of chopped cherries and swirl into the pancake to distribute, and cook for approx. 1-2 minutes or until bubbles appear on the surface. Flip and cook for 1 or 2 minutes or until golden brown. Tsf to a warm serving plate and keep warm. Serve with warm cherry sauce.
