Bacon, Zucchini & Three Cheese Frittata (with Gluten Free options)

Looking for a great egg dish to put your Christmas Day Brunch over the top? This Frittata delivers. It puffs up beautifully and is very easy to make. Don’t let the long list of ingredients put you off. This is fast,delicious and looks fabulous. I’ve made this both the tradional way and Gluten free. Both versions turn out great. This recipe also makes a great dinner accompanied by a salad. Hope you try it and let me know what you think. To make a head, have your cheeses grated and ready to go in the fridge and the night before cook your bacon and veggies and store in the fridge until the next morning.
Zucchini & Three Cheese Frittata with Gluten Free Conversion
8 slices of crumbled cooked bacon or diced ham
¼ cup grated Monterey jack cheese
¼ cup grated old cheddar cheese
¼ cup crumbled feta or goat cheese
2 tbsp. melted butter
4 extra large eggs beaten
¼ cup finely diced Vidalia onion or scallions
¼ cup finely diced red bell pepper
1 small zucchini diced or very thinly sliced in half moons.
½ tsp. salt
¼ tsp pepper
½ cup all-purpose flour or Gluten free all purpose flour mix
1 ½ cups milk or lactose free milk if dairy sensitive
Preheat oven to 350°
Fry bacon in skillet until evenly brown. Remove to paper towel to absorb any fat, then crumble and set aside. In the pan you have cooked the bacon, sauté zucchini to give it a bit of colour, add onions and peppers and continue to cook for 1 minute longer. Set aside. If using pre-cooked ham, saute veggies in 1 tbsp. of your favourite cooking oil, I currently love avacado oil.
Spray a deep dish pie plate with cooking spray. Line the bottom of the pie plate with the 3 cheeses ending with the feta or goat cheese. Add crumbled bacon or diced ham and veggie mixture in this order. Wisk to combine eggs, butter, salt and pepper, flour and milk until smooth. Pour into pie plate.
Bake in a preheated oven for 35 minutes or until set.
For added cheesiness, when done, sprinkle with freshly grated parmesan cheese and return to the oven for 1-2 minutes until parm melts.
