Hash Brown Egg Bake – Great recipe with a make ahead option, which saves time in the morning.

Hash Brown Egg Bake

1 kg. pkg. good quality frozen hash brown potatoes.  (I like the ones with the potato skins still on)

1 tbsp vegetable oil and 1 tbsp. Butter or bacon fat

½ tsp. cumin

¼ tsp. paprika

¼ tsp. garlic powder

½ tsp. chili powder

¼ tsp pepper

¼ tsp celery salt

¼ tsp sea salt

¼ tsp. onion powder

¼ cup each of finely diced red or green peppers, finely sliced green onions or red onion finely diced, and chopped fresh parsley

1 tbsp. Fresh finely chopped rosemary

8 large eggs

1 cup approx. grated Monterey jack and cheddar cheese grated

Paprika for sprinkling over the eggs

Chopped fresh cilantro or more fresh parsley for garnish  (optional)

Melt bacon fat and oil in a frying pan and heat pan to medium heat.  Add frozen potatoes and spices and stir to coat with oil and fry until warmed and golden brown.  This takes about 7-10 minutes, stirring occasionally. Add onions, fresh parsley, rosemary and diced peppers, stir to combine and turn off heat. Taste and adjust seasonings.  You might need to add a little  more salt or other spices to your taste.  (Here you could add a pinch of cayenne pepper if you like a little spicy kick)

Grease or spray with cooking spray a 9×13 pan.  Add potato mixture and smooth with a spoon to level in the pan.  Make 8 indentations large enough for each to hold 1 egg.  Don’t worry if the  bottom of the pan shows through.

Crack an egg into a small bowl and slip into the indentation in the potatoes…continue until all the eggs are in the pan.  Sprinkle with grated cheese on each egg, and sprinkle with a little paprika on each spot where there is an egg and some cheese on top.  Bake at 375° for 16-18 minutes or until eggs are set to desired doneness.  Serves 8.

Note:  You can prepare the potatoes a head of time and put in the pan and cover with plastic film and refrigerate overnight.  In the morning  just add the eggs and sprinkle with cheese and paprika and bake as directed.  Add some baking time as your ingredients are cold. Should bake for approximately 20-25 minutes
