Pumpkin Apple Streusel Muffins

These muffins are always a hit with guests. Moist and loaded with chunks of apple. I think it’s the crumbly streusel topping that makes them so popular

2 cups sugar

2 ½ cups all purpose flour

1 tbsp. Pumpkin pie spice

t tsp. baking soda

½ tsp. salt

2 eggs beaten

1 cup canned pumpkin

½ cup veg. Oil

2 cups diced chopped apples, no need to peel.

Preheat oven to 350°. In large bowl combine first five ingredients. Set aside. In medium bowl combine eggs, pumpkin, and oil and apples. Add liquid ingredients to dry. Stir just to moisten. You might need to thin the batter with a little milk…about 1/4 cup. Fill greased muffin cups ¾ full. Sprinkle with Streusel topping. Bake 35-40 min. or until tooth pick comes out clean

Streusel Topping: In small bowl combine 2 tbsp. All purp. flour, ¼ cup sugar and ½ tsp. cinnamon. Cut in 4 tsp. of butter until mixture is crumbly. Add a handful of sliced almonds and rolled oats

Makes 12-18 muffins
